Cranberry Orange Nut Bread

1 15 oz. can of Mandarin oranges
1 14 oz. can Cranberry sauce with whole berries
¾ cup sugar
2 cups flour
1½ tsp. baking powder
½ tsp. baking soda
1 egg
2 tsp. Orange zest
½ cup Chopped walnuts or pecans
¼ cup Margarine

Preheat the oven to 350°. Lightly grease a 9"x5" glass loaf pan.

Drain the oranges, reserving the juice. Coarsely chop the oranges. Divide the chopped oranges and the juice into two equal portions. Divide the cranberry sauce into two equal portions. (Reserve the remaining oranges, juice and cranberry sauce for a second loaf.)

Sift the flour into a large mixing bowl. Add the sugar, baking powder and baking soda. Add half the cranberry sauce. Add the nuts. Combine the ingredients.

Beat the egg in another mixing bowl. Soften the margarine and add it to the egg. Add half the chopped oranges, half the orange juice and the orange zest. Combine.

Pour the egg mixture into the flour mixture and gently combine all ingredients. Pour the batter into the baking dish.

Bake for approximately 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
