1 lb. ground pork
2 lbs. ground ham
2 cups bread crumbs
4 eggs
pepper to taste
2 20 oz. cans diced pineapple
1½ cups brown sugar
½ cup white vinegar
1 tsp. dry mustard
Break the eggs into a bowl and beat them.
Add the ground ham, pork, bread crumbs, and
freshly ground pepper to taste. Mix well.
Cover and place in the refrigerator.
Drain the pineapple, saving the juice. Place
the juice into a saucepan. Add the brown
sugar, vinegar and mustard. Cook over low
heat, stirring constantly, until the sugar
is dissolved.
Spread the diced pineapple evenly over the
bottom of a glass 13" x 9" baking
dish. Form the ham mixture into balls, about
1" in diameter. Arrange the ham balls
evenly over the pineapple. Pour the sugar
mixture over the ham balls. Cover the baking
dish with aluminum foil. Bake at 350° for
1 hour, or until the ham balls are thoroughly
cooked. Remove the aluminum foil and bake
for an additional 10 minutes to brown slightly.
Makes about 40 ham balls.
